Football, Football and More Football

Is it really August already? That can only mean one thing:


This year I will have 2 boys playing and I'd  be lying if I told you I wasn't freaking out just a bit. We were looking over the game schedule last night and starting Saturday, September 8th and every single Saturday through November will be football all day.  My younger son is on the 70lb team and they typically play in the morning, usually at 10 or 11am.  My older son is on the 105lb team and they typically play around 2 or 3 in the afternoon.  For away games starting at 11, we'd have to be there by 10am and they'd finish up around 1 - - the time my older son would need to be at the field ... so yeah, it will be like a full time job.  Honestly, I think I may start to dislike football!  If I start to dislike football, my husband will divorce me.

Practice starts tomorrow night at 6pm and bascially doesn't end until school starts so August (for me) is basically over too!

More Vacation Photos

Going back to work & camp this week has been hard.  Oddly, I now feel like school can start again. Which is crazy, because I'm not ready to deal with homework just yet!

Summer Vacation

Last week we went on vacation and did a little of this:

We  visited the Wisp Report in McHenry, Maryland which is surrounded by Deep Creek Lake.  We had a fantastic time and the area was absolutely stunning!  The weather was perfect - high 80's - the entire time we we were there.

We went whitewater rafting on top of a mountain, went ziplining, rode a mountain roller coaster, rented a boat and pulled the boys in a big tube behind the boat.  We even attempted some fishing but we are fishing challenged and in need of some guidance. But hey, we tried!

We also visited Swallow Falls State Park and stood on top of a 60 foot waterfall and looked over the edge ... very cool experience. Not so cool was when I slipped on a wet rock and landed really hard on my elbow and hit my head.  Ouch.  How I didn't break my arm is beyond me. The only thing that broke was my camera!  It's not working right but luckily I did not lose any pictures.  All that time I spent telling the boys to be very careful, it's slippery, etc ... I should have taken my own advice!

I'll share some more pictures soon as I'm still trying to climb out from under Mt. Saint Laundry and getting back into our normal routine.

And normal is about to change. Football starts next week. Four nights a week from 6-8pm ... give me strength!

My "Forever 39" Store

I'm not a fan of posting anything and everything to Facebook.  Or even posting a ton of pictures, or sharing other people's pictures and links. It becomes too much. Now that Pinterest has emerged fast and furious, it's even worse.  I've blocked my mother-in-law from appearing in my news feed because of the non-stop pointless posting and sharing she does. And I actually LIKE my mother-in-law but she is out. of. control.

Once in a while I come across something that I find really funny or interesting and I will share it.  Yesterday was one of those days!

Considering that a bunch of my friends and I are currently staring our 39th year of existence square in the face, I felt this was extremely appropriate.

Along with yoga pants and wine, my "Forever 39" store would sell cheese, fabulous chocolate, coordinate childcare arrangements, and Magic Mike blue-ray dvds!

Cake Batter Ice Cream, Take 2

The first recipe I tried was horrible. So horrible in fact, I threw it away so I can't even reference it!  I do know it called for adding an egg to the mix.  I hesitated doing that because hello? Raw egg in ice cream?  But being the rule-follower that I am, I followed the recipe.  I should have listened to that little voice in the back of my head telling me this wasn't going to work.  The flavor of the ice cream was fine (a little too sweet actually) but it never hardened properly so when the results were put in the freezer, it froze and tasted more like ice milk instead of ice cream.

After giving it some thought, I decided that a good Cake Batter Ice Cream recipe should be based off a vanilla ice cream recipe. So that's what I did.  I altered the Vanilla Ice Cream included in the Cuisinart recipe booklet that came with my ice cream maker.

Once it looked nice and thick (after about 15 minutes of churning) I added rainbow sprinkles.

I used some cute little Glad summer-themed containers to make single servings.  The recipe filled 8 perfectly. And I added another sprinkle of sprinkles on top.

The verdict? Perfect.  Absolutely perfect!  Some cake batter ice creams I have tasted are overly flavored and very sweet.  This is not like that.  The boys enjoyed it, topping it off with some chocolate sauce because God forbid they eat ice cream without it!

Cake Batter Ice Cream!
1 cup whole milk
1/2 cup granulated sugar
1/2 cup white cake batter (dry)
pinch salt
2 cups heavy cream
1 tablespoon pure vanilla extract

(The original vanilla ice cream recipe calls for 3/4 cup of sugar but I decreased the amount of sugar for this recipe because of the addition of the cake batter.)

My 3rd Child

I have a slew of friends who have teased me for years about having a third child.  Most of them only have two children so it's like they wanted me to be the guinea pig and take the leap first.  Other less informed people assume that because I have two boys I will have a third baby because I *need* to have a daughter.  As if having a third child after having two boys would automatically guarantee me a girl?  I never understood this way of thinking and frankly, it pissed me off to think people actually think I wouldn't feel complete if I didn't have a daughter.  I don't have the best relationship with my own mother so honestly, having a daughter kind of scares the crap out of me.

But I did have a third child. It's another boy! He's furry and licks his butt but he's adorable and such a lovebug, even when he's barking his face off at 3:45 in the morning.

Yay for puppies and sleep deprivation!

Happy After the 4th

I am alive, despite ignoring the blog for a few days.  That's what happens when I have a few days off from work - I unplug.  It's tiring looking at a computer screen all the time and I'm honestly surprised I'm not blind yet!

In honor of the 4th, I baked!  It helped that we were invited to a BBQ and I needed to bring something.  A few weeks ago I had picked up a Pillsbury "seasonal" cake mix and it was perfect for this occasion.  I used 2 8-inch round pans to bake the cake. After it cooled, I used waxed dental floss to slice off the tops of the cakes to make them even and flat.  It's a great trick that works every time!

I have a few different go-to buttercream icing recipes and this time I decided to go with the recipe that uses crisco because I was worried a recipe using real butter wouldn't hold up in this heat and humidity.  I mixed my buttercream icing and decided to tint some of it red for an added surprise inside the cake.

I even crumb coated it!

And then decided to go all fancy-schmancy:

I must say, decorating a cake with all rosettes was so EASY!  I may never decorate a cake any other way!

Forgive me for not snapping a picture once the cake was cut, but I'll assume you have a good imagination and can picture how it looked inside.  The cake got rave reviews, for taste too!
